At the start of January 2017 I decided to remove alcohol from my life in an effort to change my lifestyle…not just because of all of the wasted calories that each cocktail brings… but let’s face it…alot of poor food choices can come with the cocktails… like pizza at 1 am. Ultimately it’s just not conducive to a healthy lifestyle for me. Still I enjoy a refreshing libation when hanging with friends so I started investigating mock -tails.
This Rosemary Grapefruit Mock-tail is delicious and can be enjoyed by all….those who do not drink…and those who do… by adding a shot of gin or vodka to take it from a mock-tail to a cocktail.
2 cups fresh squeezed pink grapefruit juice
4 cups club soda
1 cup granulated sugar
1/4 cup rosemary simple syrup
3 sprigs rosemary
For Rosemary Simple Syrup:
In a small saucepan heat 1 cup water, 1 cup granulated sugar. Heat just enough so that the sugar melts into the water but does not boil. Remove from heat and add 3 sprigs of fresh rosemary. Let sit overnight so that the rosemary seeps into the syrup.
To make Mocktail:
Fill 4 glasses with ice
Pour ½ cup grapefruit juice into each glass
Add 2 tablespoons Rosemary Simple Syrup to each glass
Finish with Club Soda
Garnish with a slice of grapefruit and a sprig of rosemary
